Apricot & Ricotta Crepe
Apricot & ricotta makes a heavenly creamy topping to crepes, & for added texture add a crumbled amaretti biscuit.

- 2 tbsp ricotta mixed with half a tsp of icing sugar & 1 to 2 drops vanilla extract
- 1 tbsp apricot jam
- 1 crushed amaretti biscuit (optional)
- 1 cooked crepe
- Spread the jam over the crepe, then spread over the ricotta and sprinkle over the amaretti if using.
- Fold into four.
