Yummy Chicken Fried Rice

Tonight is the night to tackle your own version of a healthy take-out. This tasty Chinese take-away ‘treat’ is an absolute winner! Serve with special children’s chopsticks for added fuss pot appeal. This dish is also great made with turkey – which is packed with great vitamins such as zinc and vitamin B12.

Ingredients

200g long grain rice
2 carrots, peeled and diced
50g frozen peas
3 tbsp. sunflower oil
200g chicken breast diced
1 tbsp. soy sauce
1 tbsp. honey
2 onions, chopped
2 red peppers, diced
2 cloves garlic, crushed
150g cooked small prawns
2 tbsp. sweet chilli sauce
2 tbsp. soy sauce
2 eggs, beaten

Method

  1. Cook the rice and carrots in boiling salted water for 12 to 15 minutes.
  2. Add the peas for 3 minutes before the end of the cooking time. Drain.
  3. Mix the chicken with the soy sauce and honey and season.
  4. Heat 1 tbsp. of oil in a wok. Add the chicken and fry until browned and cooked through. Set aside.
  5. Heat the remaining oil in the pan. Add the onions and pepper and fry for 4 minutes until just soft.
  6. Add the garlic and cook for one minute. Add the rice, prawns and chicken and toss over the heat.
  7. Add the sweet chilli sauce and soy sauce. Mix well.
  8. Add a little salt to the beaten eggs. Heat about half a tablespoon of oil in a frying pan and swirl the egg around the base of the pan and cook to make a thin omelette. Remove from the pan, roll up and slice into strips.
  9. Add to the rice and check the seasoning.
