1 egg, beaten
100g self-rising flour
75ml milk
150g Greek yoghurt
1 overripe banana, mashed
1 small apple, peeled and grated
50g sultanas
A little oil (vegetable, rapeseed, olive)

Method
- Measure the egg, flour, milk, yoghurt, banana and apple into a bowl. Whisk until smooth. Add the sultanas.
- Heat a little oil in a large frying pan. Add large tablespoons of the mixture and fry for 2 to 3 minutes on both sides until lightly golden and cooked through.
- If freezing – freeze in a plastic box interleaved with greaseproof or baking paper.
