Watermelon Rockets

Summer means: Is Ice lolly season!
These watermelon Rockets will fly you out of this planet. A fresh, summery treat that can be done in no time!


200g watermelon without rind

2 kiwis, peeled and sliced

50g greek yoghurt

1 teaspoon maple syrup

18 dark chocolate chips

6 rocket shaped ice lolly moulds


Slice the watermelon into pieces and place in a jug. Blend until smooth using a stick blender. Pour the watermelon puree into 6 rocket lolly moulds filling them 2/3 full. Add three chocolate chips to each mould. Freeze for 40 minutes.

Put the kiwi into a jug and blend to a puree using the same method as the watermelon.

Mix the yoghurt and maple syrup together in a bowl.

Spoon the yoghurt on top of the near frozen watermelon layer. Insert a wooden lolly stick into the middle of the lollies. Freeze for 30 minutes.

Pour the kiwi puree on top of the yoghurt layer and refreeze for 2-3 hours.

Run the lollies under warm water and release the lollies from their moulds.
