Ingredients
25g caster sugar
200ml water
1 tsp vanilla extract
2 large slices of watermelon
250 strawberries, halved
200g blueberries
200ml water
1 tsp vanilla extract

Method
- Put the caster sugar and water into a saucepan. Dissolve over the heat. Bring up to the boil and reduce the liquid by half. Leave to cool. Add the vanilla.
- Stamp out star shapes from the watermelon. Place in a bowl with the strawberries and blueberries. Pour over the cold syrup and toss together.
