Vroom Vroom Sandwiches

Ingredients

2 medium eggs
2 tablespoons mayonnaise
red pepper, carrot rounds, yellow pepper to decorate, cucumber slices

1/2 avocado
lemon juice
cherry tomatoes, red pepper slices, hardboiled egg slices

2 slices Baker Street rye bread

Method

  1. Put the eggs into boiling water and boil for 10 minutes, drain, cool and peel. Roughly chop the egg and mix with the mayonnaise. Spread the egg mixture over one of the slices of bread. Decorate the sandwich with the vegetable to make a car.
  2. Mash the avocado in a bowl. Add the lemon and mix together. Spread over the rye bread. Use the vegetables and sliced egg to decorate to make a car.
