Turkey & Vegetable Rice Salad

250g packet of white rice, cooked
75g broccoli florets
100g cooked turkey or chicken, diced
175g Piccolo cherry tomatoes, diced
4 spring onions, sliced
75g sweetcorn
10g pumpkin seeds
2 tsp Dijon mustard
2 tbsp rice wine vinegar
7 tbsp light olive oil
1 tbsp runny honey


  1. Cook the rice in the microwave according to packet instructions, leave to cool.
  2. Cook the broccoli in boiling, salted water for 3 minutes, drain and refresh under cold water.
  3. Mix the rice, broccoli, turkey, tomatoes, spring onions, sweetcorn and seeds together in a bowl.
  4. Mix the dressing ingredients together in a small jug. Pour over the salad.
