A quick and easy veggie Thanksgiving platter made with sugar snap peas, red pepper, baby corn & cucumber finished off with a delicious homemade sour cream dip.
- 200g sugar snap peas
- 1 red pepper
- 150g baby corn , halved lengthways
- ½ cucumber , sliced
- Edible eyes
- 1 carrot
- cocktail sticks
Sour Cream Dip
- 200g sour cream
- 2 tbsp chives., chopped
- ½ clove garlic, crushed
- Mix the sour cream, chives and garlic together in a bowl. Season lightly and spoon into a glass bowl.
- Slice the bottom of the pepper to make the turkey’s face. Slice the remaining pepper in strips.
- Put the dip at the bottom of a platter . Arrange the sugar snap peas around the edge of the platter , then the pepper and corn to look like the turkey’s features . Arrange the cucumber in the centre.
