Turkey, Cranberry and Vegetable Balls

With protein-packed turkey and lots of veggies, these turkey, cranberry and vegetable balls harness the flavours of Christmas into one bitesize mouthful! Make ahead of Christmas and freeze for an easy appetiser.

Ingredients
2 teaspoons olive oil
50g carrot, peeled and grated
60g mushrooms, chopped
50g spinach
300g minced turkey
200g cold mashed potato
4 spring onions, chopped
25g parmesan, grated
30g dried cranberries, chopped
25g panko breadcrumbs
1 egg yolk
1 teaspoon thyme, chopped
a little oil for frying
Method
  1. Heat the oil in a frying pan. Add the carrots and mushrooms and fry for 3-4 minutes. Add the spinach and stir until wilted. Leave to cool.
  2. Put the minced turkey, mashed potatoes, cold vegetables, spring onion, cheese, cranberries, yolk, thyme and half of the breadcrumbs into a mixing bowl. Season lightly and mix well.
  3. Shape into 18 balls and roll these in the remaining breadcrumbs.
  4. Heat a little oil in a frying pan. Add the balls and fry over high heat for 5-8 minutes until golden on all sides.
