Tuna, Sweetcorn & Broccoli Pasta Bake

Tuna, Sweetcorn & Broccoli Pasta Bake

Tuna is rich in protein, vitamin D & B12 so it’s a nutritious choice for dinner or any main meal. This tuna pasta bake dish is one of my favourite fish recipes and it’s so easy to make. Once cooked the baked cheese, sprinkled on top at the end of the preparation process, makes for a lovely crisp topping.

125g small penne pasta
50g Frozen broccoli
20g butter
20g flour
600 ml milk
½ tsp Dijon mustard
50g mature Cheddar, grated
50g sweetcorn
145g tinned tuna, drained
20g extra Cheddar or parmesan to sprinkle over the top

  1. Cook the penne in boiling water according to the packet instructions. Add the broccoli 4 minutes before the end of the cooking time. Drain well and run under cold water.
  2. Melt the butter in a saucepan. Add the flour and stir over the heat. Whisk in the milk, whisking until smooth and thickened. Add the mustard and cheese. Add the sweetcorn, tuna, cold pasta, and broccoli. Spoon into a dish, and sprinkle with the extra cheese. Cook in a hot oven for 20 to 25 minutes until golden.
