Tuna & Sweetcorn Croquettes

Tuna fish contains Omega 3 essential fatty acids which are great for your baby’s development and it’s also rich in protein and vitamins. These croquettes are a good way to introduce fish and make ideal finger food.

Ingredients

150g mashed potato (cold)
2 spring onions, sliced
25g Parmesan, grated (or dairy-free alternative)
40g butternut squash, peeled and grated
20g red pepper, finely diced
1 tomato, deseeded and diced
25g sweet corn, chopped
110g tuna in sunflower oil, drained
1 egg, beaten
1 tbsp basil, chopped
50g Panko breadcrumbs or ordinary breadcrumbs
2 tbsp sunflower oil

Method

  1. Measure the potato, spring onion, parmesan, squash , red pepper, tomato, sweetcorn, tuna , egg, basil and half of the breadcrumbs into a bowl.
  2. Mix well and shape into 10 croquettes . Roll in the remaining breadcrumbs.
  3. Heat 2 tbsp of oil in a frying pan. Fry the croquettes for 5 to 8 minutes until golden and heated through.
