Tomato, Mozzarella & Pesto Toastie

Say sayonara to soggy sarnies and hello to crunchy, crispy CRIMPiT sandwiches. This back-to-school season, let this handy little device liven up your little one’s lunchbox and transform a piece of bread into a masterpiece.

Ingredients

2 cherry tomatoes, diced
2 tablespoons pesto
25g mozzarella grated
1 Warburtons Thin

Method

  1. Mix the tomatoes, pesto and cheese together in a bowl.
  2. Put one half of thin into the base of the Crimpet. Spoon the mixture into the centre, leaving a space around the edge. Put the second thin on top. Put the second thin on top and place the top of the Crimpet on top. Press down firmly to seal the sandwich and enclose the filling.
  3. Put the sandwiches into a toaster and toast until they pop up.
