Gnocchi with Tomato Carrot and Chicken

Calling all veggies for this absolutely delicious Tomato Gnocchi with Carrots & Chicken! These soft little pillows taste heavenly mixed with a rich tomato sauces.

Recipe Saved


1 tsp Olive oil
1 large Onion
2 Garlic cloves
2 Carrots
1 Chicken stock cube
1 Chopped tomato
1 can Tomato puree
300g Chicken
2 tsp Oregano
60g Mature cheddar
400g Gnocchi


  1. Blend the carrot in a food processor until smooth.
  2. In a saucepan add one tablespoon of olive oil and onion and cook until soft then add the garlic and tomato puree and cook for approx. 30 seconds.
  3. Next add the blended carrot, chicken stock, chopped tomatoes, mature cheddar and oregano to the saucepan and simmer for approx. 15 mins.
  4. Heat one tablespoon of olive oil in a frying pan. Add the chicken and fry until cooked.
  5. Cook the gnocchi in boiling water for 2 to 3 mins. Drain and add to the sauce with the chicken. Season to taste
