I call this my cheats chicken and rice! Using ready cooked rice and cooked chicken, you can whip this delicious dish up in less than 10 minutes. It’s fail-proof, and my kids love it!

Ingredients
2 tbsp olive oil
1 onion, chopped
1 red pepper, diced
1/2 carrot, peeled and finely diced
1 clove garlic, crushed
250g long grain rice, cooked
50g peas
100g cooked chicken, diced
1 tbsp soy sauce
1 tbsp sweet chilli sauce
2 slices of cucumber
1 cherry tomato
red pepper
black olives

Method
- Heat the oil in a frying pan or wok. Add the onion, pepper and carrot and fry for 5 minutes. Add the garlic and fry for 10 seconds.
- Cook the rice in the microwave for 2 minutes. Add to the pan with the peas and chicken. Toss over the heat for a few minutes. Add the soy and chilli sauce.
- Spoon into a small bowl and pat down firmly.
- Turn the bowl upside down on to a plate. Remove the bowl.
- Make a bear’s head by adding two slices of cucumber for the ears and one for the nose. Add halved tomato for the eyes and black olives for the eye balls. Add a black olive for the nose and a slice of pepper for the mouth.
