Tasty Mince with Tomato Sauce & Rice

Red meat is crucial for growing little ones, so it’s important to have a go-to recipe up your sleeve. This Tasty Mince with Tomato Sauce & Rice is packed with all the good stuff including protein from the meat, hidden veggies – and heaps of flavour!

2 tbsp sunflower oil
1 red onion, chopped
1 red pepper, deseeded and diced
1 carrot, peeled and finely diced
1 courgette finely diced
½ red chilli finely diced (optional can remove for babies)
2 cloves garlic, crushed
500g lean minced beef
1 x 400g chopped tomatoes
200ml beef stock
4 tbsp tomato puree
3 bay leaves
1 tbsp fresh thyme, chopped
2 x 250g packets ready cooked long grain rice
50g Parmesan, grated (or dairy-free alternative)


  1. Heat the oil in a saucepan. Add the onion, pepper, carrot and courgette. Fry for 5 minutes.
  2. Add the chilli and garlic and fry for 10 seconds. Add the mince and brown with the vegetables.
  3. Add the tomatoes, stock, tomato puree, bay leaf and thyme. Cover and bring up to the boil.
  4. Simmer for 30 minutes until tender and reduced.
  5. Add the rice and stir. Sprinkle with the cheese. Remove the bay leaves.
