Ingredients
2 tbsp sunflower oil
1 red onion, chopped
1 red pepper, deseeded and diced
1 carrot, peeled and finely diced
1 courgette finely diced
½ red chilli finely diced (optional can remove for babies)
2 cloves garlic, crushed
500g lean minced beef
1 x 400g chopped tomatoes
200ml beef stock
4 tbsp tomato puree
3 bay leaves
1 tbsp fresh thyme, chopped
2 x 250g packets ready cooked long grain rice
50g Parmesan, grated (or dairy-free alternative)

½ red chilli finely diced (optional can remove for babies)
2 cloves garlic, crushed
500g lean minced beef
1 x 400g chopped tomatoes
200ml beef stock
4 tbsp tomato puree
3 bay leaves
1 tbsp fresh thyme, chopped
2 x 250g packets ready cooked long grain rice
50g Parmesan, grated (or dairy-free alternative)
Method
- Heat the oil in a saucepan. Add the onion, pepper, carrot and courgette. Fry for 5 minutes.
- Add the chilli and garlic and fry for 10 seconds. Add the mince and brown with the vegetables.
- Add the tomatoes, stock, tomato puree, bay leaf and thyme. Cover and bring up to the boil.
- Simmer for 30 minutes until tender and reduced.
- Add the rice and stir. Sprinkle with the cheese. Remove the bay leaves.
