Tasty Beef Casserole with 7 Veggies

2 tbsp sunflower oil
500g diced braising beef
120g onion, chopped
40g leek, thinly sliced
50g celery , finely diced
75g parsnip, peeled and diced
75g carrot, peeled and diced
75g red pepper, diced
1 garlic clove, crushed (10g)
75g mushrooms, sliced
400g tinned chopped tomatoes
460 ml beef or vegetable stock
2 tsp smoked paprika
1 tsp dried oregano
1 tsp dried basil or 1 tbsp fresh basil
1 tbsp tomato puree
Pinch of sugar
Salt and pepper to taste (for babies over one )
1 tsp Worcestershire sauce
  1. Heat the oil in a saucepan. Add the beef and brown in two batches, if you over crowd the pan it won’t brown and will stew in the juices. Set aside.
  2. Add the onion, leek, celery, parsnip, carrot and pepper. Fry for 3 to 4 minutes.
  3. Add the garlic and fry for 20 seconds.
  4. Add the paprika, oregano, basil and tomato puree. Fry for 10 seconds .
  5. Add the tomatoes and stock and bring up to the boil.
  6. Add the beef and mushrooms, cover with a lid and simmer for 1 ½ hours until tender.
  7. Add the sugar, seasoning and Worcestershire sauce.
