Sweet Potato Veggie Balls

Packed full of protein and fibre, these Veggie Balls make a super healthy meal for kids. They’re great finger food for baby-led weaning too!

Makes: 12 balls

Suitable for Freezing
1 x 50g sweet potato, pricked
1 tbsp olive oil
1 onion, finely chopped
½ red pepper , finely diced
100g mushrooms, chopped finely
25g spinach, chopped
1 clove garlic, crushed
25g parmesan, grated
25g panko breadcrumbs
2 tsp fresh thyme
  1. Put the sweet potato into the microwave. Cook for 10 minutes until soft. Leave to cool, scoop out the flesh and mash.
  2. Heat the oil in a frying pan.  Add the onion and pepper and fry for 5 minutes. Add the mushrooms, spinach and garlic. Fry for 5 minutes. Leave to cool.
  3. Add the cold vegetables to the potato with the parmesan, panko and thyme.
  4. Shape into 12 balls.
  5. Heat a little oil in a frying pan. Add the balls and fry on all sides until golden.
