Sweet Potato & Lentil Puree

Iron is one of the most important nutrients to introduce to your baby from 6 months. Lentils are a super source of iron for little ones, as well as protein & zinc. Little taste buds will love this Sweet Potato & Lentil Puree combination due to the natural sweetness from the sweet potatoes.

 

Ingredients

2 tsp olive oil
1/2 onion, chopped
50g carrots, diced
100g sweet potato, peeled and diced
25g red lentils
400g chopped tomatoes
200mls low salt stock

Method

  1. Heat the oil in a saucepan. Add the onion and fry for a few minutes.
  2. Add the carrot, potato and lentils and fry for 3 minutes.
  3. Add the tomatoes and stock.
  4. Cover and simmer for 30 minutes until the vegetables and lentils are cooked.
  5. Blend until smooth using a stick blender.
