  • 250 g small sweet potato (peeled and chopped)
  • 75 g 1 medium carrot peeled and sliced
  • 30 g dried apricots, chopped
  • 350 ml boiling water


  1. Put the sweet potato, carrot and apricots in a saucepan. Pour over the boiling water and cover and cook for 20 minutes.
  2. Drain, and purée using an electric hand blender.
