250 g small sweet potato (peeled and chopped)<br />
75 g 1 medium carrot peeled and sliced<br />
30 g dried apricots, chopped<br />
350 ml boiling water<ol>
<li>Put the sweet potato, carrot and apricots in a saucepan. Pour over the boiling water and cover and cook for 20 minutes.</li>
<li>Drain, and purée using an electric hand blender.</li>
