Sweet Potato, Broccoli and Peas

Sweet potato is a great way to add a smooth texture to purées. You could also make this recipe with spinach instead of broccoli as a green veggie alternative.

Ingredients
Small sweet potato (roughly 330g), peeled and chopped
60g broccoli florets, washed
40g frozen peas
Method
  1. Steam the sweet potato for 3 minutes.
  2. Add the broccoli florets and steam for another 4 minutes.
  3. Add the frozen peas and cook for a further 3 minutes.
  4. Blitz the vegetables together using an electric hand blender, together with about 75ml of the cooking water from the bottom of the steamer.
