Sushi Sandwiches

Roll up, roll up! Annabel’s sushi style sandwich rolls will have your little learners longing for the lunch bell to ring! Prawns are a rich source of iron and rolled up in half white half wholemeal bread, which has added Vitamin D and calcium, it’s a packed lunch powerhouse! Try serving them with child friendly chopsticks for extra fun!

Prep Time: 10 minutes
Makes: 6 sushi sandwiches

Ingredients

Prawn & Tomato

2 slices Warburtons Half White Half Wholemeal Medium bread
75g small cooked prawns
1 tbsp mayonnaise
4 cherry tomatoes, chopped
2 small lettuce leaves

Salmon & Cucumber

2 Warburtons Half White Half Wholemeal Medium bread
75g tinned red salmon, drained
1 tsp tomato ketchup
1 tbsp mayonnaise
¼ cucumber, sliced into thin strips
Method

Prawn & Tomato

  1. Put the prawns and mayo into a small bowl. Mix well and season lightly.
  2. Put the bread onto a board. Remove the crusts and roll out thinly using a rolling pin.
  3. Place the prawns at one end of the bread and top with the tomatoes and lettuce.
  4. Tightly roll the bread up from the filling end (so that you have a long sausage shape!)
  5. Once rolled, gently but firmly press along the length of the roll so that it holds together. Then slice into three pieces.

Salmon & Cucumber

  1. Put the salmon, ketchup and mayonnaise into a bowl. Mix well and season lightly.
  2. Put the bread onto a board. Remove the crusts and roll out thinly using a rolling pin. Place the salmon at one end of the bread and top with the cucumber.
  3. Tightly roll the bread up from the filling end (so that you have a long sausage shape!)
  4. Once rolled, gently but firmly press along the length of the roll so that it holds together. Then slice into three pieces.

TOP TIP! Thinly grated carrot makes a healthy, sweet addition to your sushi sarnies.  It’s all about experimenting!
