Superfood Veggie Croquettes

Croquette a load of this. If you want your little one to up their veggie intake, these Superfood Veggie Croquettes are as good as you can get!

Ingredients

1 large sweet potato
1 tbsp olive oil
150g carrot, grated
100g courgette, grated
1/2 red pepper, diced
100g mushrooms, chopped
6 spring onions, chopped
1 clove garlic, crushed
1 tbsp fresh thyme
50g panko breadcrumbs
2 tbsp ketchup
40g Parmesan cheese, grated (or vegetarian/dairy-free alternative)
1/2 egg, beaten

Method

  1. Prick the sweet potato and place in the microwave and bake for 10 minutes until soft. Leave to cool, scoop out the flesh and mash in a bowl. You will need 175g of cooked potato.
  2. Heat the oil in a frying pan, Add the carrot, courgettes, and mushroom,  fry for 5 minutes until soft. Leave to cool and mix with the sweet potato, spring onions, garlic, breadcrumbs,  thyme, ketchup, cheese and egg. Stir and season well. Shape into 12 croquettes.
  3. Heat the oil in a frying pan. Add the croquettes and fry on all sides until golden brown.
