Ingredients
1 large sweet potato
1 tbsp olive oil
150g carrot, grated
100g courgette, grated
1/2 red pepper, diced
100g mushrooms, chopped
6 spring onions, chopped
1 clove garlic, crushed
1 tbsp fresh thyme
50g panko breadcrumbs
2 tbsp ketchup
40g Parmesan cheese, grated (or vegetarian/dairy-free alternative)
1/2 egg, beaten
1 tbsp olive oil
150g carrot, grated
100g courgette, grated
1/2 red pepper, diced
100g mushrooms, chopped
6 spring onions, chopped
1 clove garlic, crushed
1 tbsp fresh thyme
50g panko breadcrumbs
2 tbsp ketchup
40g Parmesan cheese, grated (or vegetarian/dairy-free alternative)
1/2 egg, beaten
Method
- Prick the sweet potato and place in the microwave and bake for 10 minutes until soft. Leave to cool, scoop out the flesh and mash in a bowl. You will need 175g of cooked potato.
- Heat the oil in a frying pan, Add the carrot, courgettes, and mushroom, fry for 5 minutes until soft. Leave to cool and mix with the sweet potato, spring onions, garlic, breadcrumbs, thyme, ketchup, cheese and egg. Stir and season well. Shape into 12 croquettes.
- Heat the oil in a frying pan. Add the croquettes and fry on all sides until golden brown.
