Ingredients
80g basmati rice
1/2 red onion, chopped
85g butternut squash, peeled and diced
1/2 red pepper, diced
100g courgette, diced
1/2 tsp cinnamon
1/2 tsp coriander
300g chopped tomatoes
50g cooked tinned chickpeas, drained

Method
- Add 200mls of water to the base of the steamer. Put the rice into the first compartment. Pour cold water on top of the rice until it meets the top line.
- Put the onion and squash into the clear compartment. Add the pepper, courgette and chickpeas to the top compartment. Cover and steam for 15 minutes until the rice is cooked and all the vegetables are tender.
- Put the vegetables into a processor. Add the spices and tomatoes. Blend until roughly chopped or a smooth puree.
- Spoon the rice into a bowl. Spoon the tagine on top.
