Strata with Cheese, Bacon, Eggs & Tomatoes

This savoury casserole baked with eggs, cheese, bacon and tomatoes is the most delicious way to use up any leftover bread.  So, if you’ve got a few slices of leftover loaf hanging around please don’t chuck it. Here Annabel’s used Baker Street Sliced White Load and supercharged those slices into something truly special.

1 tbsp sunflower oil
200g smoked bacon, chopped
6 large eggs
150ml milk
100g Cheddar cheese, grated
6 slices Baker Street sliced white bread, cubed
200g cherry tomatoes, chopped


  1. Preheat the oven to 180 Fan.
  2. Heat the oil in a frying pan. Add the bacon and fry until crispy. Drain on kitchen paper.
  3. Beat the eggs and milk together in a bowl. Add half of the cheese, cubed bread, tomatoes and bacon. Mix well and season. Pour into an ovenproof dish. Sprinkle with the remaining cheese.
  4. Leave to soak for 30 minutes.
  5. Bake in the oven for 30 minutes until the middle is set and the top is golden and crispy.
