Ingredients
200g butternut squash, peeled and grated
1 tbsp chives, chopped
100g Green Giant sweetcorn, drained
30g Parmesan cheese, grated
50g Cheddar cheese, grated
4 tbsp self-raising flour
2 large eggs, beaten
1 tbsp chives, chopped

Method
- Preheat the to 180C Fan. Line a baking sheet with baking paper.
- Put the squash into a clean tea towel. Squeeze out as much liquid as possible and place into a bowl.
- Measure the squash, chives, sweetcorn, Parmesan, Cheddar cheese, flour and eggs into a bowl. Beat together.
- Place a star cookie cutter onto the baking sheet. Fill the cutter with the mixture. Repeat with the remaining mixture.
- Bake in the oven for 15 to 18 minutes until firm and lightly golden.
