Starry-eyed Sweetcorn & Squash Stars

Introducing Annabel’s super tasty sweetcorn and squash stars – a seriously fun (and nutritious) recipe for kids. These adorable star-shaped treats are packed with all the goodness of Green Giant Sweetcorn and butternut squash, offering a tasty and healthy option for lunch, dinner or snack attacks! So, get ready to make mealtimes exciting with these delightful bites!

Ingredients

200g butternut squash, peeled and grated
1 tbsp chives, chopped
100g Green Giant sweetcorn, drained
30g Parmesan cheese, grated
50g Cheddar cheese, grated
4 tbsp self-raising flour
2 large eggs, beaten

Method

  1. Preheat the to 180C Fan. Line a baking sheet with baking paper.
  2. Put the squash into a clean tea towel. Squeeze out as much liquid as possible and place into a bowl.
  3. Measure the squash, chives, sweetcorn, Parmesan, Cheddar cheese, flour and eggs into a bowl. Beat together.
  4. Place a star cookie cutter onto the baking sheet. Fill the cutter with the mixture. Repeat with the remaining mixture.
  5. Bake in the oven for 15 to 18 minutes until firm and lightly golden.
