Ingredients
75g mini pasta shells
1 tbsp olive oil
½ onion, finely chopped
½ garlic clove , crushed
75g baby spinach, chopped
50g cherry tomatoes, chopped
2 tbsp crème fraiche
20g parmesan, grated

Method
- Cook the pasta in boiling water according to the packet instructions.
- Heat the oil in a saucepan. Add the onion and garlic and fry until soft. Add the spinach and tomatoes and fry until wilted.
- Add the cooked pasta, crème fraiche & parmesan. Stir until heated through.
