Ingredients
¼ red pepper, finely diced
¼ red onion, finely diced
1 small courgette, finely diced
1 tbsp olive oil
1 tbsp balsamic vinegar
1 tbsp fresh pesto
1 tbsp fresh basil, chopped
20 g Parmesan, finely grated
2 salmon fillets, skinned

Warm Tomato Dressing
100g cherry tomatoes, chopped
3 tbsp olive oil
2 tsp red wine vinegar
2 tbsp basil, chopped
½ tsp sugar
3 tbsp olive oil
2 tsp red wine vinegar
2 tbsp basil, chopped
½ tsp sugar
Method
- Pre-heat the oven to 180 C Fan / 200 C / Gas 6.
- Put the vegetables onto a baking sheet lined with non stick paper. Add the olive oil and season. Toss together, then roast for 20 to 25 minutes until light brown, then tip into a bowl.
- Add the balsamic, pesto and parmesan and mix well.
- Put the salmon onto a baking sheet lined with non stick paper. Season then top with the mixture. This is best done using your hands.
- Bake in the oven for about 15 minutes.
- Measure all of the dressing ingredients into a saucepan. Gently warm and serve with the salmon.
