Salmon with Roasted Vegetables & Warm Tomato Dressing

Love this Salmon with Roasted Vegetables & Warm Tomato Dressing recipe – such a delicious combination of warm salmon with a pesto topping and a cherry tomato vinaigrette.

Ingredients

¼ red pepper, finely diced
¼ red onion, finely diced
1 small courgette, finely diced
1 tbsp olive oil
1 tbsp balsamic vinegar
1 tbsp fresh pesto
1 tbsp fresh basil, chopped
20 g Parmesan, finely grated
2 salmon fillets, skinned
Warm Tomato Dressing
100g cherry tomatoes, chopped
3 tbsp olive oil
2 tsp red wine vinegar
2 tbsp basil, chopped
½ tsp sugar

Method

  1. Pre-heat the oven to 180 C Fan / 200 C / Gas 6.
  2. Put the vegetables onto a baking sheet lined with non stick paper. Add the olive oil and season. Toss together, then roast for 20 to 25 minutes until light brown, then tip into a bowl.
  3. Add the balsamic, pesto and parmesan and mix well.
  4. Put the salmon onto a baking sheet lined with non stick paper. Season then top with the mixture. This is best done using your hands.
  5. Bake in the oven for about 15 minutes.
  6. Measure all of the dressing ingredients into a saucepan. Gently warm and serve with the salmon.
