125g salmon fillet
3 large tomatoes
1 tsp tomato puree
knob butter
1 clove garlic, crushed
25g grated cheddar
70g pasta shapes

Method
- Pre heat the oven to 180 Fan. Put the salmon in tin foil with the butter and make a parcel. Put on a baking sheet and bake in the oven for 15 minutes.
- Put the tomatoes into boiling water for 2 minutes. Remove and remove the skin. Roughly chop the tomatoes.
- Put the butter into a saucepan. Add the garlic and fry for a few seconds. Add the tomatoes and puree and cook for a few minutes until reduced.
- Cook the pasta in boiling water according to the packet instructions, drain. Add the pasta to the sauce, flake in the salmon and cheese and mix well. Sprinkle with basil.
