½ small onion, chopped
150g sweet potatoes, peeled & diced
150mls weak veg stock or water
150g salmon fillet, diced
100g Piccolo cherry tomatoes, halved
1. Melt the butter in a saucepan. Add the onion & fry for 2 minutes. Ad the potatoes & stock. Cover with a lid and simmer for 10 minutes.
2. Add the salmon & tomatoes, cover & simmer for 5 minutes until the Salmon is cooked through. Blend until smooth
