Salmon, Potato and Corn Chowder

Ingredients
Generous knob of unsalted butter
100g onion, finely diced
50g leek, roughly chopped
1.5 tbsp plain flour
300ml unsalted fish stock
100g carrot, peeled & finely diced
150g potatoes, peeled & diced
150g salmon fillet, skinned & diced
50ml milk
15g Parmesan, finely grated
3 tbsp tinned sweetcorn
1 tsp lemon juice
100g onion, finely diced
50g leek, roughly chopped
1.5 tbsp plain flour
300ml unsalted fish stock
100g carrot, peeled & finely diced
150g potatoes, peeled & diced
150g salmon fillet, skinned & diced
50ml milk
15g Parmesan, finely grated
3 tbsp tinned sweetcorn
1 tsp lemon juice
Method
- Melt the butter in a saucepan. Add the onion and leek, gently soften for 5 minutes.
- Sprinkle over the flour and add the stock. Bring to the boil adding the carrot and potato.
- Cover with a lid and simmer for 10 minutes.
- Add the remaining ingredients and simmer for 5-7 minutes until the salmon is cooked and the vegetables are tender. Mash to desired consistency.
- Follow this with some fresh fruit for a balanced lunch or dinner for 9-12 month olds.
