Salmon & Pea Pasta

Top up your omega 3 by eating salmon in this light yet creamy pasta dish, mixed with leek, pea & dill.

Prep Time: 5 minutes
Cook Time: 15 minutes
Makes: 4-6 portions

Ingredients
150g salmon fillet
150g fusilli pasta
100g frozen peas
2 tbsp olive oil
1 leek, sliced
150g crème fraiche
1 tbsp dill chopped
1 tbsp lemon juice
Method
  1. Preheat the oven to 180C Fan. Line a baking sheet with foil. Put the salmon fillet on top . Fold over the foil and make a parcel. Bake for 12 minutes and flake.
  2. Cook the pasta in boiling salted water according to the packet instructions. Add the peas 3 minutes before the end of the cooking time.
  3. Heat the oil in a large frying pan. Add the leek and fry for 3 to 4 minutes, Add the crème fraiche, pasta, peas, lemon and dill. Bring up to the boil, add the salmon and season.
