This is a great way to entice children to enjoy fish. By sticking them onto sticks and giving them an orange glaze, it makes them far more appealing. If giving to little ones under 3 remove the sticks.

Ingredients
75ml fresh orange juice
3 tbsp maple syrup
2 tsp soy sauce
1 tsp rice wine vinegar
2 salmon fillets, skin removed
8 bamboo skewers soaked in water for 30 minutes

Method
- Put the orange juice, maple syrup, soy sauce and vinegar into a small saucepan. Bring to the boil and boil hard for 2-3 minutes, until syrupy. The bubbles will become quite large in the pan – a sign that you should check how much the glaze has reduced.
- Pour the mixture into a shallow bowl and leave to cool. Pre-heat the grill. Cut the salmon into 4 pieces each and then cut each piece in half, then each half again, length-ways.
- Toss the salmon into the glaze to coat, and then thread the pieces onto the skewers. Put on a baking sheet lined with foil and grill for 2 minutes. Turn over and spoon over any glaze left in the bowl. Grill for a further 2-3 minutes, until cooked through. Cool slightly before serving. If you like, you can pour over any syrupy juice that has collected in the foil.
