Ingredients
1 tbsp olive oil
1 small onion, chopped
1 small carrot, peeled and grated
½ an eating apple, peeled and grated
1 clove garlic, crushed
250ml passata
40g baby pasta shells
100g cooked salmon fillet, all bones removed and flaked
1 tbsp Parmesan cheese, grated (or dairy-free alternative)

Method
- Heat the oil in a pan. Add the onion, carrot and apple and fry for 3–4 minutes. Add the garlic and fry for 30 seconds.
- Add the passata. Cover and simmer for 10 minutes.
- Cook the pasta according to the packet instructions. Drain.
- Stir the drained pasta into the sauce with the flaked salmon and cheese. If you prefer you can blend the sauce, then mix with the pasta and flaked salmon.
