Salmon & Broccoli Mini Muffins

75g broccoli
60g Parmesan
100g self raising flour
1 tsp baking powder
150g cooked salmon fillet
1 tsp Dijon mustard
2 tsp thyme, chopped
100ml milk
1 large egg
2 tsp chia seeds


  1. Preheat the oven to 180 Fan. LIne a 24-hold mini muffin tin with cases.
  2. Put the broccoli into a processor. Process until finely chopped.  Add the remaining ingredients and blend until smooth. Spoon into the cases. Bake for 18-20 minutes until well risen and pale golden.
