This is such an all-round delicious & nutritious recipe, I have created Salmon 2-ways, a puree and a finger food. It’s important to include oily fish like salmon in your baby’s diet from 6 months as the essential fatty acids are vital for their brain and visual development.

Salmon, squash & dill puree
1/2 teaspoons olive oil
1 spring onions, chopped
30g peeled butternut squash, finely chopped
10g sweetcorn
50mls water
25g raw or cooked salmon fillet, chopped
½ teaspoon dill, chopped
5g Parmesan or Cheddar cheese, grated

Salmon, squash & dill croquettes
1/2 teaspoons olive oil
1 spring onions, chopped

15g cooked or raw salmon fillet, chopped
5g Parmesan or Cheddar, grated
10g breadcrumbs
1 spring onions, chopped
10g peeled butternut squash, grated

Method
To make the salmon puree:
- Heat the oil in a saucepan. Add the spring onions and squash and fry for 2 minutes, Add the sweetcorn and water. Cover with a lid and bring up to the boil. Simmer for 8 minutes, Add the salmon and continue to simmer for 5 minutes.
- Remove from the heat and add the dill and cheese. Spoon the mixture into the Itsy Blitz® blender. Add up to 10mls of water. Screw on the lid and blend.
To make the salmon croquettes:
- Heat the oil in a saucepan. Add the spring onions and squash and fry for 5 minutes.
- To make the breadcrumbs add a piece of crust-less white bread and blitz in the Itsy Blitz® blender, alternatively you can use store bought breadcrumbs.
- Measure all the ingredients into the Itsy Blitz® blender including the squash & spring onions. Screw on the lid and attach to the base, Blend until finely chopped, spoon into a bowl. Shape into 3 small croquettes.
- Heat a little oil in a frying pan. Add the croquettes and fry for 5-7 minutes until golden brown and cooked through in the middle.
