Rice with Chicken, Sweetcorn & Peas

This dish is simple to prepare & tasty to eat. You can also add prawns to the dish.

100g Basmati rice
sunflower oil
1 onion, finely chopped
1 garlic clove, crushed
40g frozen peas
110g cooked chicken, finely diced
70g tinned sweetcorn, drained
2 tsp sweet chilli sauce
1 tbsp soy sauce
2 eggs, lightly beaten


  1. Cook the rice according to packet instructions. Drain and refresh under cold water, leave to cool.
  2. Heat the oil in a saucepan. Add the onion and garlic and sauté over a low heat for 8 minutes until soft. Add the peas and stir for 3 minutes.
  3. Add the chicken, sweetcorn and cooked rice and heat through. Add the sweet chilli sauce and soy.
  4. Add the eggs to a pan, scramble them until they are cooked and dry. Break up into small pieces then add to the rice. Season and serve.
