  • 100g long grain rice
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 70g courgette, finely diced
  • ½ red pepper, finely diced
  • 1 clove garlic, crushed
  • 150g passatta
  • 1 tbsp red pesto
  • 70g cooked chicken diced
  • 1 tbsp basil , chopped
  • 1 tsp sweet balsamic vinegar


  1. Cook the rice in boiling water according to the packet instructions. Drain.
  2. Heat the oil in a saucepan. Add the onion, courgette and pepper. Fry for 5 minutes , then add the garlic and fry for 30 seconds.
  3. Add passata then simmer for 10 minutes until reduced. Add the pesto, chicken , basil , vinegar and rice. Mix well together.
