Rice n’ Easy

A rice n’ easy way to serve rice! This could also make a tasty dairy free recipe for your little one (just be sure to choose a dairy-free pesto).

Prep Time: 10 minutes
Cook Time: 25 minutes
Makes: 2 portions

Ingredients
100g long grain rice
1 tbsp olive oil
1 small onion, finely chopped
70g courgette, finely diced
½ red pepper, finely diced
1 clove garlic, crushed
150g passata
1 tbsp red pesto (or dairy free version)
70g cooked chicken, diced
1 tbsp basil , chopped
1 tsp sweet balsamic vinegar
Method
  1. Cook the rice in boiling water according to the packet instructions. Drain.
  2. Heat the oil in a saucepan. Add the onion, courgette and pepper. Fry for 5 minutes, then add the garlic and fry for 30 seconds.
  3. Add the passata then simmer for 10 minutes until reduced. Add the pesto, chicken, basil, vinegar and rice. Mix well together.
