Rainbow pasta salad

This rainbow pasta salad is filled with veggies and finished with a drizzle of one of our favourite salad dressings.

Ingredients
150g bow tie pasta
80g broccoli florets
ΒΌ cucumber , deseeded and sliced into crescents
100g cherry tomatoes , quartered
1 carrot , peeled and cut into ribbons
100g tinned sweetcorn
4 spring onions , sliced
1 cooked chicken breast, diced

Dressing

2 tbsp balsamic vinegar
26 tsp olive oil
1 tsp soy sauce
Pinch of sugar
Method
  1. Cook the pasta in boiling salted water according to the instructions. Add the broccoli for the last 3 minutes. Drain and refresh under cold water.
  2. Put into the bowl. Add the remaining ingredients.
  3. Mix the dressing together in a jug and pour over the salad.
