Quinoa & Cauliflower Cheese Bake

250g packet cooked red and white quinoa
300g cauliflower florets
20g butter
20g plain flour
250ml milk
½ tsp Dijon mustard
75g Cheddar cheese, grated
50g frozen peas


  1. Pre heat the oven to 180C Fan.
  2. Cook the quinoa in the microwave according to the packet instructions. Spoon into the base of 4 /6 ramekins.
  3. Cook the cauliflower in a steamer for 8 minutes. Puree half of the cauliflower using a stick blender.
  4. Melt the butter in a saucepan. Add the flour and stir for 10 seconds. Stir in the milk, whisking until smooth and thickened. Add the Dijon mustard and half the cheese.
  5. Put the cauliflower florets and peas on top of the quinoa. Spoon over the cheese sauce and sprinkle with the remaining cheese.
  6. Bake for 15 minutes until bubbling.
