Quick Vegetable Rice

This Quick Vegetable Rice recipe does what it says on the tin – it’s fast, filling, and full of veggies! To be enjoyed by the entire family, simply throw a bunch of ingredients together in a pan and you’re good to go!

1 tbsp oil (vegetable, rapeseed, olive)
½ onion, chopped
50g carrot, finely diced
50g brown mushrooms, finely diced
1 clove garlic, crushed
175g cooked basmati rice
2 tbsp passata
1 tbsp frozen peas
1 tbsp tinned sweetcorn
1 tbsp fresh basil, chopped


  1. Heat the oil in a frying pan. Add the onions, red pepper, mushrooms and carrots and fry for 5 minutes.
  2. Add the garlic and fry for 30 seconds. Add the rice and stir to coat in the pan.
  3. Add the passata, peas, sweetcorn and basil.
  4. Stir over the heat until heated through.
