Ingredients
1 tbsp oil (vegetable, rapeseed, olive)
½ onion, chopped
50g carrot, finely diced
50g brown mushrooms, finely diced
1 clove garlic, crushed
175g cooked basmati rice
2 tbsp passata
1 tbsp frozen peas
1 tbsp tinned sweetcorn
1 tbsp fresh basil, chopped

Method
- Heat the oil in a frying pan. Add the onions, red pepper, mushrooms and carrots and fry for 5 minutes.
- Add the garlic and fry for 30 seconds. Add the rice and stir to coat in the pan.
- Add the passata, peas, sweetcorn and basil.
- Stir over the heat until heated through.
