Quick & Easy Vegetable Quesadillas

This easy veggie quesadillas recipe is 100% customizable with whatever veggies you happen to have on hand. It’s also on the healthier side, quick and easy to make, and SO delicious!

Cook Time: 5 minutes

2 tbsp olive oil
1 onion chopped
½ red pepper, finely diced
75g butternut squash, very finely diced’
1 clove garlic, crushed
150g tinned chopped tomatoes
2 tbsp basil chopped
30g gruyere cheese, grated
8 mini wraps
  1. Heat the oil in a frying pan. Add the onion, red pepper and squash. Fry for 5 minutes. Add the garlic, fry for a few seconds. Add the tomatoes. Simmer for 5 minutes until soft and reduced. Add the basil.
  2. Put four wraps onto a board. Spread over the mixture and sprinkle with cheese. Top with the other wraps, Press down.
  3. Heat a little oil in a large frying pan. Add the quesadillas and fry for 2 minutes each side until golden and crisp. Slice into wedges.
