Puff Pastry Pinwheels

Ingredients
1 x 320g puff pastry ready rolled
3 tbsp sundried tomato paste
50g Piccolo tomatoes, chopped
½ red onion, finely chopped
3 tbsp basil, chopped
25g parmesan, grated
25g mozzarella, grated

Method
- Preheat the oven to 200C Fan
- Unroll the pastry. Spread the sundried tomato paste over the pastry leaving a 2 cm border around
the edge. - Sprinkle with tomatoes, onion, herbs, and cheese. Season. Roll up lengthways to make a tight long
roll. - Chill for 30 minutes.
- Slice into 1 inch /2.5cm slices and arrange on a large baking sheet lined with non-stick baking paper.
- Bake for 20 to 25 minutes until golden and crisp.
