Puff Pastry Apple and Almond Tarts

Ingredients

50g caster sugar
50 soft butter
1 egg, beaten
75g ground almond
1/2 teaspoon almond extract
375g Ready Rolled Puff Pastry Sheet
1 egg, beaten
3 eating apples.
2 tablespoons caster sugar
3 tablespoon honey


Method

Preheat the oven to 180 Fan. Line a baking sheet with non-stick paper.

Put the butter and caster sugar into a bowl. Mix well until creamy. Add the egg and beat well. Add the ground almonds and extract and mix until smooth.

Unroll the pastry and stamp out 6 x 12 rounds using a 12cm round cutter. Score a 1/2 cm border around the edge. Put the rounds on the baking sheet. Divide the almond paste between the rounds, spreading out into the centre of the pastry.

Slice the apples and arrange on top of the almond paste. Sprinkle the tops with caster sugar. Brush the edge with beaten egg.

Bake in the oven for 20 minutes until well risen. Brush the apples with honey and put back into the oven for 5-8 minutes until golden and crisp.
