Prawn Stir Fry with Rice Noodles

Prawns are shell fish packed with proteins, vitamins and minerals. Paired with rice noodles, which are a fantastic, slow energy releasing food (also gluten free!) this is a super fuel dish!


100 g rice noodles
sunflower oil
100 g raw tiger prawns
1 garlic clove, crushed
100 g sugar snap peas, sliced
6 spring onions, sliced
100 g mushrooms, sliced
soy sauce


  1. Cook the noodles according to the packet instructions.
  2. Heat the oil, add the prawns & garlic & fry for 2 minutes.
  3. Add the sugar snap peas & spring onions & fry for 2 minutes.
  4. Add the mushrooms & noodles & fry for 2 minutes. Pour over the mirin & soy sauce & toss together.
