Pizza with Whipped Ricotta & Roasted Cherry Tomatoes

Ingredients
300g strong white bread flour
1 tsp dried yeast
1 tbsp olive oil
200ml water
1/2 tsp salt
4 x 220g packet of Piccolo Cherry Tomatoes
4 cloves garlic, sliced
5 sprigs thyme
2 tbsp olive oil
bunch basil
250g ricotta cheese
250g mozzarella ball, chopped
50g Parmesan cheese, grated (or vegetarian alternative)
1 tsp dried yeast
1 tbsp olive oil
200ml water
1/2 tsp salt
4 x 220g packet of Piccolo Cherry Tomatoes
4 cloves garlic, sliced
5 sprigs thyme
2 tbsp olive oil
bunch basil
250g ricotta cheese
250g mozzarella ball, chopped
50g Parmesan cheese, grated (or vegetarian alternative)
Method
- Make the dough. Measure the flour, yeast, oil, water and salt into a bowl. Mix together to form a sticky dough. Knead on a floured work surface until smooth. Put into an oiled bowl, cover and leave to rise for 1 hour.
- Pre heat the oven to 220 Fan. Divide the dough into three pieces. Roll the dough out into 3 small oval shapes. Place on a large baking sheet line with baking paper.
- Put the tomatoes, garlic, thyme and oil onto a baking sheet. Put both trays into the oven for 12-15 minutes.
- Measure the ricotta, mozzarella and seasoning into a bowl. Mash together.
- Leave the bases to cool slightly, then spread over the ricotta mixture. Top with the tomatoes, basil and parmesan cheese.
