Pizza with Whipped Ricotta & Roasted Cherry Tomatoes

This super easy Pizza with Whipped Ricotta & Roasted Cherry Tomatoes will be a new family favourite. Making pizza bases is much easier than you may think, and a fun activity to get the kids involved with too. Top with soft ricotta & Piccolo Cherry Tomatoes  for a delicious pizza night in!

Ingredients

300g strong white bread flour
1 tsp dried yeast
1 tbsp olive oil
200ml water
1/2 tsp salt
4 x 220g packet of Piccolo Cherry Tomatoes
4 cloves garlic, sliced
5 sprigs thyme
2 tbsp olive oil
bunch basil
250g ricotta cheese
250g mozzarella ball, chopped
50g Parmesan cheese, grated (or vegetarian alternative)

Method

  1. Make the dough. Measure the flour, yeast, oil, water and salt into a bowl. Mix together to form a sticky dough. Knead on a floured work surface until smooth. Put into an oiled bowl, cover and leave to rise for 1 hour.
  2. Pre heat the oven to 220 Fan. Divide the dough into three pieces. Roll the dough out into 3 small oval shapes. Place on a large baking sheet line with baking paper.
  3. Put the tomatoes, garlic, thyme and oil onto a baking sheet. Put both trays into the oven for 12-15 minutes.
  4. Measure the ricotta, mozzarella and seasoning into a bowl. Mash together.
  5. Leave the bases to cool slightly, then spread over the ricotta mixture. Top with the tomatoes, basil and parmesan cheese.
