Ingredients
1 Large pitta bread
2 Tsp oil (vegetable, rapeseed, olive)
½ Clove garlic, crushed
3 Cherry tomatoes, deseeded and diced
4 Basil leaves, chopped
15g Parmesan cheese, finely grated

Method
- Preheat the grill. Slice the bread in half through the middle to make thin slices of pitta.
- Place on a baking sheet. Mix the oil and garlic together in a bowl. Brush over the bread. Sprinkle with tomato, basil and cheese.
- Place under the grill for 5 to 8 minutes until lightly golden and crisp. Slice into 10 fingers.
