Piccolo Pizza Faces

Don’t be fooled by the funny faces, there’s nothing funny about these muffin pizzas that are packed full of hidden veggies and good nutrients!

Blend delicious Piccolo Chery Tomatoes into a moreish pizza base – these little gems are not only highly versatile but extremely nutritious.

Ingredients

2 English muffins
Piccolo Cherry Tomato Sauce:
1 tbsp olive oil
1 large shallot, finely chopped
1 clove garlic, crushed
175g Piccolo tomatoes, chopped
1 tbsp tomato puree
Toppings:
Sliced Cheddar cheese
Black olives
red pepper
Halved Piccolo tomatoes
Basil leaves
Courgetti

Method

  1. Preheat the oven to 180b Fan. Grease a baking sheet .
  2. Make the sauce. Heat the oil in a saucepan. Add the shallot and garlic and fry for 3-4 minutes. Add the tomatoes and puree and stir over the heat for 2-3 minutes. Cover with a lid and simmer for 10 minutes until the tomatoes are soft and the sauce has reduced.
  3. Slice the muffins in half and place on the baking sheet. Spread the sauce over the top. Stamp out rounds from the cheese and slice the olives. Put the cheese on the muffins to make the eye and add tomatoes and olive for the eye balls. Decorate with basil leaves.
  4. Make a mouth out of the peppers and add courgetti for the hair.
  5. Bake for 10-12 minutes.
