Piccolo Cherry Tomato Sushi Roll-ups

There’s no reason why children can’t enjoy sushi! My sushi-style wraps are an ingenious way to get kids trying new ingredients. Replacing sushi rice with bread makes for a quick and inexpensive lunchbox pleaser. Chopsticks at the ready for these Piccolo Cherry Tomato Sushi Roll-ups!

Method

Egg, mayo & tomato sushi roll ups

1. Put the eggs into a saucepan. Cover with cold water. Boil for 12 minutes. Drain, cool & peel. Finely chop the eggs & place in a bowl. Add the mayo, tomatoes & pinch of salt.
2. Remove the crusts from the bread. Place on a board. Roll out thinly using a rolling pin.
3. Divide the mixture between the two slices. Put a little cress on top. Roll up the bread tightly into a log shape. Slice into 5 rolls.

Cheese & tomato sushi roll ups

1. Remove the crusts from the bread. Place on a board. Roll out thinly using a rolling pin.
2. Spread with cream cheese and sundried tomato paste. Sprinkle with cheese & tomatoes.
3. Roll up tightly to a log shape, slice into 5 rolls.
