Perfect Pizza

This is my foolproof  home made pizza recipe. It’s a fun recipe to make with kids and let them design their own toppings. To help the dough rise I like to oil the bowl before I add the dough. If you want to make the dough in advance and it has risen just pop it into the fridge.

300g strong bread flour
1 tsp instant yeast (from a sachet)
1 tsp salt
1 tbsp olive oil plus extra for drizzling

Tomato Sauce

1 onion , diced
1 clove garlic, crushed
250ml passata
1 tbsp tomato paste
Handful of fresh basil


150g mozzarella (I like to use the ready grated low moisture mozzarella rather than the balls of mozzarella )
Cherry tomatoes halved
Pepperoni (optional)
Fresh basil
  1. To make the base, Put the flour into a large bowl, stir in the yeast and salt. Make a well in the centre and pour in 200 ml warm water and the olive oil and stir together using a wooden spoon to make a soft sticky dough.
  2. Remove from the bowl onto a work surface sprinkled with flour and knead for 5 minutes until smooth. Put the pizza dough into a clean lightly oiled bowl, cover with a tea towel and leave to rise for an hour in a warm place.
  3. Meanwhile to make the sauce. Saute the onion for 4 minutes , then add the garlic and saute for 30 seconds. Add the passata and tomato  tomato paste and cook over a medium heat for about 12 minutes until thickened.
  4. Preheat the oven to 240C /220C Fan. Knead the dough and then divide into three balls to make three individual pizzas. On a floured surface, roll out the dough using a rolling pin into rounds that are quite thin. Lift onto two baking sheets lined with non stick paper.
  5. Spread the tomato sauce over the pizza bases, Sprinkle with the cheese and tomatoes or any other toppings, drizzle with a little oil and season. Bake in the oven for 10 minutes.
