Perfect Paella

2 tbsp olive oil
2 large onions, chopped
1/2 red pepper, diced
2 large cloves garlic, crushed
1 large chicken breast, diced
1 tsp sweet smoked paprika
1 tsp turmeric
200g long grain rice
3 large tomatoes, chopped
2 tbsp sun dried tomato paste
500ml chicken stock
150g cooked large king prawns
150g frozen peas
2 tsp lemon
2 tsp thyme, chopped
3 spring onions, sliced


  1. Heat the oil in a large skillet pan. Add the onions and pepper and fry for 2 minutes.
  2. Add the garlic and chicken breast and fry until sealed. Add the spices and rice.
  3. Add the tomatoes, paste and stock. Stir and bring up to the boil, cover and simmer for 15 minutes.
  4. Remove the lid, add the peas, prawns, lemon and thyme Stir for 5 minutes.
  5. Sprinkle with spring onions and serve.
